Maison Sassy, the leading French cider house, has formed a formidable pairing with world-renowned cocktail bar Coupette to create the brand’s first ever Calvados (a variety of brandy made from apples).
Set to launch in October 2021, the capricious duo has produced two unique liquids. The first is the Calvados Fine, a fresh, young and vibrant Calvados with aromas of fresh green apple. The second is an aged Calvados XO, an amber liquid that provides aromas of stewed apple, nutmeg and notes of cocoa.
Calvados Fine
Once distilled, the eau de vie spends at least two years in oak barrels, giving the liquid it’s structure, complexity and sophisticated finish. The rich calvados is best utilised in cocktails, or on its own over ice.

– Alcohol: 40%
– Best enjoyed at 18-20C
– Colour: Light gold with shades of brandy
– Nose: Fresh aromas of acidulous apples
– Tasting notes: Green apple, white flower, high vivacity, tonic, fresh attack
Calvados XO
After spending at least six years in the French oak barrels, this unique spirit is best served neat as a digestif, or simply over ice.
– Bottle: 70cl
– Alcohol: 40%
– Best enjoyed at 18-20C
– Colour: Amber-yellow colour
– Tasting notes: Well balance between the tannins from the barrels and the vivacity of fresh fruits
Both blends are based on Château de Sassy’s long owned family recipe. Home to a large array of organic apple orchards from Normandy, Château de Sassy continues its mission to elevate the region and showcase the unique blending of authentic Norman provenance. Having started with the region’s traditional ciders Maison Sassy is now putting its knowledge and expertise to task with the family’s beloved Calvados.
With “flavour focused spirits set to be a big trend next year”, according to Andrew Marcu, Coupette’s Head Bartender, the two Calvados drinks are likely to be in high demand as the appetite for such a spirit continues to grow.
Calvados Fine and Calvados XO will be served at Coupette from October and available to purchase online from November 2021.
